Enjoy and remember, use “just a pinch”… -Janet{{more}}What You Need1 tsp olive oil, light1/2 large onion, finely chopped1/2 large red pepper, diced1/2 large; green pepper, diced2 large jalapeno peppers, finely chopped2 cloves garlic, minced1/4 tsp sea salt2 tbsp chili powder1 tbsp ground cumin1 can diced tomatoes1 can cannellini beans, drained and rinsed1 can black beans, drained and rinsed1 c water1-1 1/2 tsp cornstarchTOPPERSSun-dried tomato & basil feta cheese; sliced scallions, chopped cilantro, sour creamDirections• Heat oil in a large pot over med-high heat. Add peppers, onion garlic, and jalapenos. Cook 5 min or until vegetables are tender, stirring occasionally.• Add chili powder, cumin and salt. Cook, stirring occasionally, 1 min. Add tomatoes, beans and water. Bring to a boil. Lower heat and simmer, covered for 20 min. • In a cup, mix cornstarch with a little water to make a paste. • Remove cover and add to chili, stirring to thicken. • Serve chili topped with feta cheese, scallions, cilantro and sour cream.www.justapinch.com/beanchili© 2011 Just A Pinch Recipe Club.
