Skeet’s Texas Grill

I had an opportunity to sit down and talk with Skeet Smith about his restaurant. I found Skeet to be West Texas friendly and direct.I took the direct approach in interviewing him. My first question was why should a person spend their hard earned dollars at his restaurant? He said “Our restaurants are truly family restaurants. We serve no alcohol, we buy the highest quality products; we serve a good meal at a good price and offer great service.” He added, “Our restaurants are not fancy but our food is fresh.”{{more}}One could have ended the interview after that statement; however, I wanted to know more about Skeet. Skeet said that he started in the restaurant business as a dishwasher at the age of 19 in 1967.He has owned restaurants for 35 years. I asked him why he decided to make the restaurant business his career. He said, “I like people and I like serving people.” What advice would he give someone entering the restaurant business? “You have to be able to deliver a good consistent product with a sense of urgency at a good price.” I asked him what played the greatest role in his success. He said, “It has been my employees. They are like family, I treat them well. Some of them have been with me 14-15 years. We are closed on Sundays. I believe it’s important that my employees have that time with their family.” Skeet said that everyone he comes in contact with is important; from his supplier, to his customers. Every individual is important to them.Skeet’s Texas Grill has 5 locations: Merkel, Abilene, Snyder and 2 locations in Sweetwater. His son, Tyler, is one of the managers and his daughter, Harmony, is the office manager.
